Maleic acid (CAS# 110-15-6, butanedioic acid) is a colorless, crystalline compound that occurs naturally in a wide variety of unripe fruit and is used as a flavoring and in the aging of wine. It occurs in sour apples, hence the name, from the Latin malum, apple.
